Trio cannot be more old-fashioned if it tried, and nothing much has changed since 1957, when founder and patriarch Lam Khai Tjioe (father of current operator Effendi Sumartono) decided to change the wall colour from blue to green, and added lattice to shield the place from outside pollution. It is still the modest, unassuming, slightly cramped roadside eatery with no air-conditioning, with its menu-on-the-wall still written in the old spelling and beloved 50’s oldies belting from the stereo.
Flavours, too, remain the same, with the legendary chicken in butter sauce (ayam goreng mentega), which is really a combination of butter and saus Inggris (Chinese style-Worcestershire-like sauce), still topping the must-eat list. This is followed by the prawn rolls (lumpia udang), hot plate stir-fried convolvulus (kangkung cah hotplate) and seafood or crabmeat fried rice. The place has brought together such diverse types as gourmands, local foodies, students, intellectuals and scholars from foreign lands who, on their sojourns, claim they have returned to relive their “Trio experience”.
